Young Jean-Marc Sélèque, based in the Côteaux Sud d’Epernay, is part of a vanguard of producers in Champagne bringing the region into modernity while still honoring its rich history. He believes in fully ripe grapes as a means of lowering dosage, practices biodynamically in his vineyards, and has eschewed fining and filtration. The soils in the Côteaux Sud d’Epernay have more chalk than elsewhere in Champagne, and as a result the wines tend to be full and fleshy.
