There quite simply isn’t a lot of Chenin Blanc being grown in Chile, but Julio Bouchon and David Nieuwoudt (of South Africa) make us believe there should be more. Being fermented with its skins in clay amphorae lends the wine textural richness, yet it retains a crisp and lemony personality. Serve with lemon-stuffed branzino off the grill.
