From the oldest house in Champagne, founded in 1584, pre-estimable-monk-Dom-Perignon. Based in the village of Aÿ, they’ve historically been a Pinot Noir focused house, but recently their Chardonnay holdings have improved and they’re starting to release some of the most graceful, snappy wines amongst all the historic houses.
