After enological school and a couple of winemaking stints elsewhere, he and his wife Fabiana turned the property into a verified winery. Saverio uses four months of maceration on his Sangiovese à la old-school Barolo, then blends it with local favorites Malvasia Nera, Canaiolo, Ciliegiolo, and Colorino.
