Tethys was the Greek goddess of the sea and also the name given to the ancient sea that used to cover the Champagne area, giving way to the chalky soils that dominate today. It’s also an apt name for this wine, as it has an herbal salinity almost reminiscent of celery salt. Organically farmed by fifth-generation grower Richard Fouquet.
