At one point Eric Rodez was the mayor of Ambonnay, so dedicated was he to his home village. At another he worked in the cellars of Krug for a stretch, and his winemaking reflects it. Fermentation in oak, a mind-boggling blending of parcels equaling more than the sum of their parts, and extended lees aging lead to powerful, concentrated, and supremely focused Champagnes. The Empreinte series is his attempt to showcase the very best of the two varieties he works with, Chardonnay and Pinot Noir. A special wine from a unique man.  ~3g dosage.
