Sheep farm first, winery second. Not many producers around our home base of Napa can list the same order of priorities, but it’s far from uncommon in pastoral areas like Sancerre. This hits all the elements of Sancerre- roundness, cut, grassiness, and green fruit. Have this with a simple salad of arugula, lemon juice, sea salt, and olive oil.
