If you like Nebbiolo but aren’t a huge fan of tannins, this is the wine for you. If you’ve never tried Pelaverga, Burlotto’s is the one to try. Made with Pelaverga Piccolo, a variety unique to the northernmost Barolo commune of Verduno (and entirely distinct from the Pelaverga di Pagno grown across the river), this is a savory aromatic, brisk, food-enhancing wine, light enough to be served with a chill and sturdy enough to go with anything dripping in umami.
